I don’t have a lot of time to cook but I do adore cake, and shop-bought cake is never as nice as homemade. I thought it would be good to share a cake which you can literally whip up in 5 minutes. It’s perfect even for the busiest of weeks! The only problem? It gets eaten very quickly too!
225g soft margarine
225g caster sugar
225g self raising flour
2 tablespoons cocoa
2 tablespoons milk
Heat your oven to 180C/fan 160C/gas 4.
Put the margarine and all the dry ingredients in a mixer and mix well.*
Add the eggs and milk and combine well so you have a smooth mixture. The mixture should not be too thick and should drop slowly off the spoon. If it’s too thick add a little more milk. You’re looking for a gloopy consistency rather than stiff (if that makes sense!)
Tip into your tin. I use a square silicone baking tin which is approx 8.5“ square and 2” deep. It doesn’t need lining or greasing which makes life easy, but use whatever you have.
Soft, moist chocolate sponge, topped with sweet, rich chocolate icing and the sprinkles of your choice. The perfect homemade afternoon treat!
Bake in the oven for 40-50 mins until a skewer inserted into the centre comes out clean.
If you’re using a silicone cake tin leave the cake in there to cool, then turn out.
When the cake is cold make some basic chocolate icing:Mix 200g sieved icing sugar with 2 tablespoons of cocoa and enough hot water to mix into a thick icing (add a tiny bit of water at a time until you get the right consistency – you don’t want it too thin).
Pour on top of the cake then top with sprinkles, mini marshmallows, chocolate chips or broken-up chocolate bars. Whatever you fancy! The icing will take about an hour to dry. Then cut into squares and enjoy!
I warn you though, it will get eaten very quickly, so you could end up making this very regularly! As Trisha Yearwood said:

* If you don’t have a mixer it’s no problem: you can mix everything manually. Cream the butter and sugar together, then add the flour and cocoa and mix well. Add the eggs one at a time and gradually mix until you have the right consistency. Add a little milk if the mixture is too stiff. Then you’re ready to bake.
