Keto Waffles (Chaffles)

This has been a real life-saver of a recipe. When I first started on a keto diet I was spending ages prepping and cooking each meal – just because I’d found so few quick and easy breakfast or lunch dishes.

This keto waffle was a real game-changer.

Use bagged pre-grated mozzarella (good luck if you fancy trying to grate a ball of mozzarella), which is useful in countless keto recipes.

That way it literally takes 30 seconds to mix together and 2 minutes to cook, something which is manageable even on the busiest of mornings. Plus, the chaffles are delicious. Warm, melty and endlessly variable.

Have on their own, or (my personal favourite) add a dash of chilli sauce to the mix, which makes a warm satisfying breakfast with a great chilli kick.

Don’t forget to check the nutritional info on the back of your chilli sauce as lots of brands contain hidden sugar and huge amounts of carbs. My current favourite is Encona Original Hot Pepper Sauce. It only has 1.1g of carbs per 100g and you only need a little squirt so it’s ideal.

You can also vary the chaffles by adding in half a chopped tomato, some cooked chopped bacon or sausage or fresh herbs. You can also vary the cheese, but I’d recommend sticking to the more rubbery types of cheeses or you just won’t be able to get the chaffles out of the pan! Other good cheeses for this are Edam, cheddar, Elemental or Gruyere.

If you prefer your waffles sweet add some blueberries and Agave syrup, or some keto chocolate sauce and a dollop of cream for a quick and treaty week-day pudding.

Ingredients

  • 1 egg
  • 1 small handful of grated mozzarella

Directions

  1. Heat the waffle maker until at a high temperature.
  2. Beat the egg and mozzarella together with a fork.
  3. Pour into the waffle pan and close to cook for 2 minutes or until the waffle is browned. Don’t be tempted to peek to early or it’ll stick!
  4. Use something plastic to lift out your waffle and enjoy!
